Pie

Someone said it was National Pie Day and asked about your favorite pie growing up.  That got me thinking about Mom and my Aunt Nora.  Both were great cooks and bakers.  But my favorite pie is Exquisite Pie.   When we first moved into our house we had super nice neighbors.  Thelma and Roy, their daughter Jeanie, and her husband Perry were an old time Virginian family.  We became front porch friends very quickly and they were like grandparents to my very young children.    We got to talking about food one day.  Food is always a hot topic; we all love to eat good stuff.   They gave me a recipe for a Exquisite Pie.  It is my favorite pie and is it easy.  Here it is and I hope you enjoy it too.

2 eggs
1 cup sugar
1/2 cup coconut
1/2 cup raisins
1/2 cup pecans
1 stick melted butter
1/4 cup milk
2 tsp vanilla
1 unbaked pie shell

 

Miss all together.  Pour into the pie shell. Bake at 350 until firm for 30 to 45 minutes.
